A TASTE OF ITALY WITH PAIRED WINE
Create a two course Italian meal – saltimbocca with cheesy polenta and cavolo nero, followed by a fragrant basil panna cotta with orange syrup. Our Wine Tasting at Home experts will also be on hand to advise on wine pairings.
In this class you’ll be cooking saltimbocca – an Italian classic made with veal. You’ll learn how to cook veal perfectly, and how to make a simple but flavoursome sauce to accompany it, along with Italian vegetables and polenta. To finish, you’ll create a delicate, basil-infused panna cotta with orange syrup.
Our Wine Tasting at Home team will join us to talk about the perfect wine pairings – Araldica Barbera d’Asti with the saltimbocca and sweet Muscat Beaumes de Venise with dessert.
Our chef tutor will share lots of cookery advice and inspiration – and because there’ll be a maximum of eight households in the class, you’ll get plenty of interaction with them.
What to expect:
- Learn to make saltimbocca with a reduction sauce
- Perfect polenta and cook cavolo nero the Italian way
- Create a delicate panna cotta

What you'll need:
Ingredients for two (please prepare ahead of class)
Dairy:
- 40g Unsalted butter
- 330ml Whole Milk, divided into 80ml and 250ml portions
- 80ml Double Cream
- 50g Parmigiano
Meat:
- 2 x 120g Veal escalopes (or chicken breasts, if preferred)
- 4 Slices prosciutto crudo or Parma ham
Fruit and veg:
- 4 Sage leaves
- 10g Basil leaves
- 1/2 Lemon
- 1 Orange
- 1 Clove garlic
- 200g Cavolo nero
Store cupboard:
- Salt
- Pinch chilli flakes (optional)
- 1 Bay leaf
- 2 tbsp Plain flour
- Olive oil
- 100ml Marsala dolce (alternatively, sherry or white wine can be used)
- 100g Polenta
- 1 leaf gelatine
- 25g Caster sugar
- 15g Demerara sugar
- 3 Amaretti biscuits
Equipment
- 2 small saucepans
- 2 large frying pans, 1 with a lid
- Measuring jug
- Sieve
- Tongs
- Whisk
- Knife
- Chopping board
- Microplane or fine grater
- Rolling pin
