Learn how to make melt-in-the-mouth cheddar biscuits, ideal for gifting or adding to your cheeseboard, as well as a gently spiced tomato chutney. While the biscuit dough chills, you'll make the delicious black mustard seed, cumin and tomato chutney that's perfect with cheese, and can be kept in a jar until Christmas.

Serves: Makes 24 biscuits and 300g of chutney

Duration: This session lasts approx. 1 hour.


  • 200g mature cheddar, grated
  • 100g unsalted butter
  • 2 medium shallots
  • 5 garlic cloves
  • 8 plum tomatoes
  • 200g plain flour
  • 2 tsp sea salt flakes
  • 2 tsp pink peppercorns
  • 2 medium eggs
  • 4 tbsp ghee or butter
  • 1 tsp black mustard seeds
  • 1 whole star anise
  • 6 whole cloves
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 dried Kashmiri chilli or 1 tsp dried chilli flakes
  • 200g caster sugar
  • 300ml white wine vinegar


  • Food Processor (optional) or large bowl
  • Baking parchment
  • 2x baking sheets or baking trays
  • Butter knife
  • Large Saucepan
  • Zester or fine grater
  • Wooden spoon or heatproof spatula
  • Jars or airtight container to store chutney
  • Cellophane bags & ribbon or boxes, for storing and gifting
