Panforte is a traditional Italian 'hard bread', filled with nuts, fruits and honey, which complement any cheeseboard and it's perfect for gifting too. While the Panforte bakes, we'll make and roll a batch of chocolate truffles with Amaretto (or the spirit of your choice); a delicious gift or a treat served with coffee at the end of Christmas dinner.

Makes: 10 large chocolate truffles & 1 large Panforte (4 gifting portions)

Duration: This class will last approximately 1 hour

Prepare ahead: Please have all your ingredients weighed out and ready along with the equipment you’ll need.

Shopping List (makes 10 large chocolate truffles & 1 large Panforte (4 gifting portions):

Dairy:

  • 100ml double cream
  • 5g unsalted butter, softened
  • 100ml double cream
  • 5g unsalted butter, softened

Store cupboard:

  • 100g dark chocolate (we recommend Waitrose No1 65% Dominican Republic)
  • ½ tsp vanilla bean paste
  • 35ml Disaronno amaretto liqueur (or whiskey, cointreau, frangelico or spirit of your choice)
  • 60g Amaretti biscuits (or roasted chopped hazelnuts, or cocoa powder for rolling truffles)
  • 75g pistachios, shelled
  • 75g blanched hazelnuts
  • 125g dried figs
  • 125g dates
  • 60g honey
  • 100g light brown soft sugar
  • 1 tsp mixed spice
  • 70g plain flour
  • 50ml sweet wine (we recommend Vin Santo)
  • Icing sugar, for dusting

Equipment:

  • 2 x small saucepans
  • Large mixing bowl
  • 2 x small mixing bowls
  • Knife
  • Chopping board
  • Whisk
  • Spatula
  • Rolling pin *optional
  • 20cm square tin or 23cm round tin
  • Baking parchment
  • Spoons, for scooping truffles
  • Cellophane bags & ribbon or boxes, for storing and gifting

About your instructor: You’ll be led through this class with one of our experienced chefs from the Waitrose Cookery School.
