In this friendly, fun and interactive class a Waitrose Cookery School chef will show you how to make delicious carrot cakes with orange and cream cheese icing. You’ll be taught how to whisk together a batter and flavour the cakes to perfection. To top it off you’ll learn how to make a light and flavoursome cream cheese icing.

Parental supervision may be required for:

  • Using a knife
  • Using a peeler
  • Using a grater
  • Using the oven to toast the walnuts and bake the cakes

Prepare ahead instructions: Don’t forget to have your ingredients weighed out ready to cook-along with us, all preparation will be done as part of the course.

Shopping list (makes 12 small cakes)

Fruit & Veg - Prepare ahead by washing fruit & vegetables, but no need to peel and chop

  • 180g carrots
  • 1 orange


  • 50g unsalted butter, softened
  • 200g full fat cream cheese (Philadelphia)

Store cupboard

  • 200ml sunflower oil
  • 65g walnut halves or raisins
  • 230g dark brown sugar
  • 3 medium eggs
  • 230g self raising flour
  • 1 nutmeg or ¼ tsp ground nutmeg
  • 75g icing sugar

Dry ingredients for cake batter - these can be weighed out together

  • 1 tsp ground cinnamon
  • ¼ tsp ground cloves
  • 1 tsp ground ginger
  • 1 tsp bicarbonate of soda
  • ¼ tsp salt


  • Electric hand whisk or balloon whisk
  • Muffin tray
  • Baking tray for walnuts
  • 2 small bowls, 1 for carrot, 1 for eggs
  • 2 medium bowls, 1 for the flour, 1 for the icing
  • Large bowl for the wet ingredients
  • Chopping board
  • Knife
  • Balloon whisk
  • Measuring jug for oil
  • Sieve
  • Vegetable peeler
  • Box grater
  • Scales to weigh carrots
  • 2 dessert spoons
  • Fork
  • 2 Spatulas or tablespoons
  • Citrus juicer/reamer- optional
  • Palette knife
  • 12 paper cases
  • Cooling rack
  • Serving plate
