In this course you’ll learn basic and advanced knife skills. You’ll also prepare and make a stir-fry with Thai flavours like lemongrass, kaffir lime and fish sauce, before finishing with perfectly cooked jasmine rice.

Serves: 2 people

Duration: This class will last approximately 1 hour 30 minutes

Prepare ahead instructions: Please have your stir fry sauce ingredients measured in a small saucepan before the course starts. Please have all your other ingredients weighed out and ready along with the equipment you’ll need.

Shopping list (serves 2)

Fruit & Veg - Prepare ahead by washing fruit & vegetables but no need to peel and chop

  • 2cm piece root ginger
  • 1 garlic clove
  • 1 lemongrass stalk
  • 1 shallot
  • 2 kaffir lime leaves
  • 20g Thai basil
  • 10g fresh mint
  • 10g fresh coriander
  • 50g green beans
  • 100g tenderstem broccoli
  • ½ red pepper
  • 1 small carrot
  • 1 salad onion
  • 1 lime
  • 1 Thai red chilli

Meat/Fish

  • 180g raw king prawns

Store cupboard

  • 1 tbsp roasted peanuts
  • 2 tbsp sunflower or vegetable oil
  • 150g jasmine rice
  • ½ tsp sea salt

Stir-fry sauce ingredients - can be measured out together

  • ½ tbsp gochujang chilli paste
  • ½ tbsp palm sugar
  • 1 tbsp rice vinegar
  • 1 tbsp oyster sauce
  • 1 tbsp fish sauce
  • 1 tbsp toasted sesame oil
  • ½ tbsp tamarind paste

Equipment :

  • Small saucepan for sauce
  • Chopping board
  • Chef's knife
  • Peeler
  • Wooden spoon
  • Measuring spoons
  • Frying pan or wok, for stir-fry
  • Saucepan with lid, for rice
  • Sieve, to wash rice
  • Spoons for tasting
