One of our experienced chefs will show you how to balance spices, layer flavours and expertly cook lamb in this classic rogan josh recipe. You'll also learn how to make and cook flatbreads, perfect for dunking into a rich curry sauce. Lastly, our chef will help you develop your knife skills with a refreshing cucumber sambal.

Duration: This class will last approximately 1 hours 30 minutes

Prepare ahead instructions: Please have all your other ingredients weighed out and ready along with the equipment you’ll need

Shopping list (serves 2)

Fruit & Veg - Prepare ahead by washing fruit & vegetables

  • 1 large onion
  • 1 small red onion
  • 10g fresh ginger
  • 2 cloves garlic
  • 3 red chillies (2 medium for the curry, 1 hot for the sambal)
  • 1 green chilli
  • ½ cucumber
  • 2 limes
  • 15g fresh coriander

Meat

  • 260g Waitrose British diced lamb shoulder or for a vegetarian curry, choose either 260g chopped mixed vegetables or 200g paneer

Dairy

  • 220g natural yogurt (200g for the curry, 20g for the flatbread)

Store cupboard

  • 15ml vegetable or sunflower oil
  • 1 cinnamon stick
  • 400g tin chopped tomatoes
  • 4 tbsp tomato paste
  • 25ml coconut cream
  • Salt (½ tsp for the sambal, ¼ tsp for the flatbread, plus extra for seasoning)
  • 165g self raising flour

Whole spice mix - these can be weighed out together

  • 2 tsp coriander seeds
  • 2 tsp cumin seeds
  • 1 tsp black peppercorns

Ground spice mix - these can be weighed out together

  • 1 tsp paprika
  • 1 tsp turmeric
  • 2 tsp garam masala

Equipment :

  • 2 small bowls for the spice mixes
  • Frying pan (preferably non stick)
  • Pestle and mortar or spice grinder
  • Medium saucepan
  • Chopping board
  • Knife
  • Microplane or fine grater
  • 2 medium bowls for sambal and flatbread
  • Measuring jug
  • Weighing scales
  • Rolling pin
  • Sieve
  • Tongs
  • Kitchen roll
  • Wooden spoons or spatula
  • Spoons for tasting
  • Serving plates
