In this class you will learn to make a simple fresh pasta dough using semolina, flour and water. We'll then shape it simply using basic equipment you already have at home, no need for a pasta machine. We'll talk about how different shapes of pasta are intended for different kinds of sauces, and then use this knowledge to create a classic dish, plus make an authentic Tiramisu.

What you’ll take away:

  • Learn how to make & shape a simple pasta dough
  • Discussion of cultural differences between regions of pasta making in Italy
  • Create a simple sauce with a few ingredients
  • Make an authentic Tiramisu

Serves: 2 people

Duration: This class lasts approx. 1.5 hours.

Ingredients:

For the pasta and sauce:

  • Parmesan (for serving)
  • 90g mascarpone
  • 150ml double cream
  • 1-2 tbsp creme fraiche
  • 2 cloves garlic
  • 1 lemon
  • A small head of broccoli, cut into bite sized florets
  • 2 pork sausages
  • 2 eggs
  • 100g semolina
  • 100g 00 flour (plain flour or bread flour also work)
  • 1-2 tsp fennel seeds
  • 100ml white wine
  • Chilli flakes
  • Olive oil
  • Salt
  • Black pepper

For the Tiramisu:

  • 50g caster sugar, divided into 2x 25g,
  • Vanilla bean paste/essence
  • 40ml strong black coffee (brewed and cooled)
  • 30ml Marsala sweet wine
  • 40ml amaretto
  • Rum or Marsala
  • 8 lady finger biscuits
  • 8 amaretti biscuits
  • Cocoa powder for dusting (optional)

Equipment:

  • 3 mixing bowls (ideally 1 glass or ceramic)
  • 1 small bowl
  • Fork
  • Butter knife
  • Large pan half filled with water
  • Frying pan or saucepan
  • Slotted spoon or colander
  • Microplane, zester or fine grater
  • Measuring cup or jug
  • Wooden spoon
  • Whisk
  • Serving dish for Tiramisu

About your instructor: You’ll be led through this class with one of our experienced chefs from the Waitrose Cookery School.
