PASTA SAUCE MEAL PREP WITH WAITROSE & PARTNERS COOKERY SCHOOL - £15

Learn how to make three easy but delicious pasta sauces – two for your fridge or freezer, and one for your lunch

You’ll never be stuck for a quick, tasty and nutritious lunch or supper if your fridge or freezer is stocked with ready-prepared portions of pasta sauce.

In this class, you’ll learn how to make three different pasta sauces: classic, richly-flavoured tomato sauce, fragrant basil pesto and creamy carbonara. The tomato sauce and pesto are perfect for freezing, while indulgent carbonara is surprisingly easy to make, and will become a regular favourite.

We’ll also show you how these sauces can be used in other dishes, from soups to traybakes. And because there’s a maximum of eight households in each class, you’ll get plenty of interaction with your Waitrose & Partners Cookery School chef.

What to expect:

  • Learn how to make the most of simple, good quality ingredients

What you’ll need:

Ingredients (please prepare ahead of class)

  • 50g basil
  • 2 cloves garlic
  • 1 lemon
  • 90g Parmigiano Reggiano, Pecorino, or other hard Italian cheese
  • 150g pancetta, lardons or smoked streaky bacon (courgette or mushrooms for a vegetarian alternative)
  • 150g spaghetti, or other dried pasta
  • 150g nuts or seeds, such as pine nuts, pistachios, walnuts or pumpkin seeds
  • 1 x 400g can chopped tomatoes (fresh are also suitable)
  • 2 eggs
  • 250ml olive oil
  • Salt, pepper
  • Caster sugar (optional)

Equipment

  • 1 saucepan
  • 1 frying pan
  • 1 large pot with lid for boiling pasta
  • 1 baking tray
  • Pestle & mortar, mini-blender, or food processor
  • Microplane
  • Wooden spoon
  • Rubber spatula
  • Tongs or colander
  • Mug
  • Small bowl
  • Tupperware or freezer bags for storage
