Get hands on stirring the perfect Vesper martini and cook along with one of our Waitrose cookery school chefs to make the perfect accompaniment, a roasted shallot and chestnut crostini, perfect for this festive season.

(This class requires some preparation in advance - see below).
What you’ll take away:

Serves: Makes 8 starter dishes or 16 canapes (crostini)
Duration: This session lasts approx. 1 hour.
Ingredients:
For the crostini:
- 125g ricotta
- 3 sprigs thyme
- 300g echalion shallots
- 1 tsp hot horseradish sauce
- 100g cooked chestnuts
- 2 tbsp olive oil
- 1/2 ciabatta loaf, thinly sliced
- Sea salt
For the Vesper Martini:
- 50ml No.3 Gin
- 20ml Vodka
- 10ml Bianco vermouth - Cinzano/Martini
- 2 Dashes Angostura bitters
- Orange twist
- 1 bag of ice
Equipment:
For the crostini:
- Oven proof pan - cast iron or heavy based pan
- Knife
- Chopping board
- 2 Large baking trays
- Blender
- 1 medium bowl
For the Vesper Martini:
- Mixing glass
- Bar spoon (or chopstick)
- Hawthorn strainer (or slotted spoon)
- Jigger (or egg cup)
- Peeler
- Martini glass or coupette
Prepare ahead: For this class, you'll need to make your roasted shallots in advance, following step 1 of the recipe HERE.
About your instructor: You’ll be led through this class with an experienced mixologist from No.3 and one of our skilled chefs from the Waitrose Cookery School.
