Serves: We are preparing enough chicken jus & roast potatoes to serve 6 people, plus 500ml cranberry sauce.
Duration: This session lasts approx. 1 hour.
Ingredients:
- 1 onion
- 1 carrot
- 1 small leek
- 1.5kg Inca Bella roasting potatoes
- 2 sprigs thyme
- 4 sprigs rosemary
- 5 cloves garlic
- 300g cranberries (fresh or frozen)
- 1 orange
- 475g chicken wings
- 1L fresh chicken stock
- 1-2 tbsp sunflower oil
- 250ml dry white wine
- 180g caster sugar
- 40ml ruby port
- 3 cardamom pods
- 1 tsp vanilla bean paste
- 100g goose fat
- 1 tbsp sea salt flakes
