You will make your own Guinness burger using veal and beef and learn the secrets to keeping the shape as it cooks and the best way to pack it full of flavour. Once cooked, it will be served in a brioche bun with a slice of Monterey Jack cheese. And no burger is complete with the equally important sides – sticky Guinness onions and hand-cut potato wedges, anyone?

What you’ll learn:

  • The ultimate Guinness burger
  • Homemade wedges
  • Sticky Guinness onions

Serves: 2 people

Duration: This class will last approximately 1 hour 30 minutes

Prepare ahead instructions: Please have all your other ingredients weighed out and ready along with the equipment you’ll need

Shopping list (serves 2)

Fruit & Veg - Prepare ahead by washing fruit & vegetables, but no need to peel and chop

  • 2 sprigs thyme
  • 2 shallots
  • 2 medium maris piper potatoes
  • 1 large tomato
  • ¼ round lettuce

Meat

  • 200g 20% fat beef mince
  • 100g 15% fat veal mince

Dairy

  • 2 slices Monterey Jack cheese

Store cupboard

  • 75ml Guinness - divided into 50ml and 25ml
  • ¼ tsp fine sea salt
  • 2 Heston brioche burger buns
  • 3 tbsp sunflower oil
  • 7 slices Mrs Elwood burger gherkins - 1 reserved for the burger sauce
  • 1 tsp soft brown sugar
  • 1 tsp malt extract

The following can be measure together:

  • 3 tbsp mayonnaise
  • 2 tbsp tomato ketchup
  • 1 tbsp American mustard

Equipment

  • Large frying pan with lid - for sticky onions and frying burgers
  • Medium size bowl - for mixing the burger patties
  • 2 small bowls - for burger sauce and sticky onions
  • Large baking tray - for potato wedges
  • Small baking tray - for resting patties
  • Knife and chopping board
  • Wooden spoon or spatula
  • Tongs
  • Measuring spoons
  • Dessertspoons
  • 2 serving plates

About your instructor: You’ll be led through this class with one of our experienced chefs from the Waitrose Cookery School.
